Balanced Breakfast for Busy Mornings
Being not much of a morning person, I often sacrifice breakfast for more sleep. However, I realized the importance of starting the day with a nutritious meal for sustained energy levels. To make mornings easier, I sought out a make-ahead breakfast option and decided to try out the Blueberry-Coconut-Walnut Baked Oatmeal recipe from our collection.

What caught my attention in this recipe was its high fiber content, with each serving providing 10 grams of fiber. Fiber has a plethora of health benefits, including reducing the risk of type 2 diabetes and heart disease. Given the history of these conditions in my family, I saw an opportunity to introduce more fiber into my diet by trying this recipe.

Convenience of Meal Prep
Opting for an efficient meal prep solution, I chose to prepare the baked oats on Sunday night. This way, I could have a delicious breakfast ready to go for the next morning, even if I hit the snooze button one too many times. Due to a broken oven, I decided to bake them in the oven section of my air fryer, which worked seamlessly.

Step-by-Step Preparation
After preheating my air fryer, I started by prepping the dates. Soaking them for about twenty minutes softened them, which I then blended into a rich paste. The recipe also involved making a blueberry filling by simmering frozen berries, water, and vanilla until the sauce thickened.

Creating the Dish
Combining the date paste with coconut milk, banana, egg, coconut extract, and vanilla extract, I then mixed in oats, walnuts, coconut, baking powder, and salt. Carefully folding in the blueberries, I assembled the dish in layers in a baking dish and topped it with coconut and nuts before baking it in the air fryer.

Delicious Outcome
After thirty minutes, my apartment was filled with a delightful aroma. Allowing the oats to cool for a bit, I couldn’t resist trying a slice before bedtime. The contrasting textures of the gooey blueberry filling and the crisped oatmeal layer on top were a delightful surprise.

Enhanced Flavors
The flavors of the dish melded together overnight, becoming even more pronounced when reheated the next day. A quick and fiber-rich morning meal was just what I needed.
